Stirling Castle’s A Midwinter’s Feast

Discover the dishes that might have made it to the Queen’s banqueting table 500 years ago and experience the traditions of a royal Renaissance Christmas with music, dancing and the art of tomfoolery. Visit our festive food market in the Chapel Royal and try delicious samples from local businesses.”

The event runs from 12:30 p.m. to 3:30 p.m.

 

Chicken Soup

Here is a wonderful soup recipe from Stirling Castle’s Unicorn Cafe.  I particularly like it because it doesn’t require searching up a whole bunch of ingredients and it sounds so hearty and delicious.

 

Rustic Chicken, Leek & Potato Broth Serves 4
Ingredients
IL Vegetable stock
250g Leeks – cut into 2cm pieces and washed
500g Potatoes scrubbed and cut into 2cm dice
4 x Chicken thighs
Salt & pepper
Method
1. Bring the vegetable stock to the boil
2. Add the chicken thighs and allow to simmer for 20 minutes
3. Remove the chicken with a slotted spoon from pot and place on a plate and leave to cool
4. Remove the skin and pick the chicken from the bone
5. Add the leek to the stock and boil for 5 minutes, then remove from pot with slotted spoon and allow to cool
6. Add the potatoes to the pot and cook them until soft, roughly 15 minutes
7. Remove half the potatoes from the pot when they are soft and keep with the cooked leek
8. Blend the remaining potato and stock until smooth
9. Add the reamining potato, leek and chicken
10. Simmer for 5 minutes and season to taste
Serve with some crusty bread.
